Tasting Notes:
An intense colour. The nose offers notes of spices, tobacco, black cherry, cassis and earth. Rich, rounded, the palate offers black cherry, red fruits and subtle caramel. The tannins and acidity are well balanced.
Vinification:
Night mechanized harvest. Full destemming followed by cold pass-over on a heat exchanger. Fermentation in stainless steel tanks with controlled temperature. After fermentation 50% of the blend aged in French oak barrels for 9 months.
Suggested Pairings:
Ideal to pair with roasted or grilled meat. It also combines with cheese and brownie.
